Chicken breasts

of pesto
Ciabatta or baguette

Instructions
Marinate the chicken breasts in 2 tablespoons of pesto for at least 30 minutes.
Grill the chicken on medium heat until fully cooked (about 7 minutes per side).
While the chicken is cooking, toast the bread slices lightly.
Spread the remaining pesto on one side of each slice.
Place a lettuce leaf on two slices.
Add the cooked chicken on top of the lettuce.
Layer with tomato slices.
Top with the remaining bread slices, pesto side down.
Slice in half and serve.
Notes
