Boneless chicken breasts or thighs

of rice
Assorted vegetables
broccoli, bell peppers, carrots

tablespoons
of soy sauce

tablespoons
of oil
Instructions
Cook 1 cup of rice as per the packaging instructions.
While the rice cooks, cut the chicken into bite-sized pieces.
Heat oil in a pan over medium heat and add the chicken. Cook until browned and fully cooked.
Add the chopped vegetables to the pan and stir-fry for 3-4 minutes or until slightly tender.
Pour soy sauce over the chicken and vegetables. Stir to coat evenly.
Serve the chicken and vegetable mix over a bed of cooked rice.
Notes
Marinate chicken in soy sauce for at least 30 minutes prior to cooking for added flavor.
Rinse rice before cooking to remove excess starch and prevent it from becoming sticky.
Cook vegetables to a slight crunch to retain nutrients and texture.
Use a non-stick pan or wok for easier cooking and clean-up.
