In a large bowl, combine olive oil, minced garlic, lemon juice, paprika, thyme, salt, and pepper. Add the chicken thighs and toss until well coated. Let the chicken marinate for at least 30 minutes.
Preheat your grill to medium-high heat and oil the grates.
Place the chicken thighs on the grill, skin side down. Cook for 6-8 minutes, then flip and cook for another 6-8 minutes, or until the chicken is fully cooked (reaches an internal temperature of 165°F).
