Instructions
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook until golden and cooked through, about 6-7 minutes per side. Remove the chicken and set aside.
In the same skillet, add the minced garlic and sauté until fragrant.
Add the sun-dried tomatoes and spinach, sautéing until the spinach wilts.
Lower the heat and stir in the heavy cream, bringing the mixture to a simmer.
Return the chicken to the skillet, spooning the sauce over the chicken.
Simmer until the sauce has thickened and the chicken is heated through.
Notes
To ensure your chicken cooks evenly, try to use chicken breasts that are of similar size.
When sautéing the garlic, be careful not to burn it as it can give a bitter taste to your dish.
If you’re using frozen spinach, squeeze out as much water as possible to prevent the sauce from becoming too thin.
The sun-dried tomatoes can be quite tangy, adjust the quantity according to your preference.
Allow the dish to simmer gently after adding the cream to prevent it from curdling.
