Instructions
Preheat your oven to 375°F (190°C).
Season chicken breasts with salt and pepper and place them in a baking dish.
Bake for 20-25 minutes, or until chicken is cooked through (internal temperature of 165°F).
Remove from the oven and top each chicken breast with slices of mozzarella and tomatoes, then sprinkle with fresh basil.
Return the dish to the oven for another 5-7 minutes, until the cheese is melted and bubbly.
Drizzle with balsamic glaze before serving.
Notes
Make sure to not overcook your chicken as it can become dry. Use a meat thermometer to ensure it reaches an internal temperature of 165°F.
For a more flavorful dish, marinate the chicken in some olive oil, garlic, salt, and pepper for at least 30 minutes before cooking.
Allow the cooked chicken to rest for a few minutes before topping with mozzarella. This allows the juices to redistribute throughout the meat.
Try to choose tomatoes and basil that are as fresh as possible. The quality of these ingredients can greatly affect the overall flavor of the dish.
If you're using a balsamic glaze, don't be heavy-handed. It's quite sweet and a little goes a long way.
