Half a kilogram of chicken

cups
of cooked rice

cup
of mixed vegetables
carrots, peas, bell peppers

tablespoons
of soy sauce

Instructions
Marinate chicken pieces in 1 tablespoon of soy sauce. Set aside for 30 minutes.
Heat a wok or large pan over medium heat. Add a little oil and scramble the eggs. Remove and set aside.
In the same pan, add the chicken and stir-fry until cooked through. Remove and set aside.
In the same pan, add a little more oil if needed, then add the vegetables. Stir fry until they're tender.
Add the rice, remaining soy sauce, cooked chicken, and scrambled eggs to the pan. Stir well to combine and heat through.
Serve hot, garnished with chopped green onions or a squeeze of lime.
Notes
Use leftover, cooled rice for the best texture. Freshly cooked rice can turn mushy.
Marinate the chicken in soy sauce and pepper for at least 30 minutes for better flavor absorption.
Cook the eggs separately and then mix them into the rice to ensure they're fully cooked and evenly distributed.
Adjust the amount of soy sauce according to your taste. Adding too much can make the dish salty.
Don't rush the cooking process. Cook on medium heat and let the flavors develop slowly.
