Instructions
Cut the chicken and sweet potatoes into bite-sized pieces.
In a large pan, sauté the onions and garlic until they're soft and fragrant.
Add the chicken to the pan and cook until it's no longer pink.
Add the sweet potatoes, curry powder, and coconut milk to the pan. Stir everything together.
Cover the pan and let the curry simmer for about 20-30 minutes, or until the sweet potatoes are tender.
