Instructions
In a large pot, sauté the onions and bell peppers until soft.
Add the chicken to the pot and brown on all sides.
Sprinkle the paprika over the chicken, stirring to coat evenly.
Add the diced tomatoes, cover the pot, and let it simmer for about 30-40 minutes, or until the chicken is tender.
Season with salt and pepper to taste, then serve with your choice of accompaniment.

For a more intense flavor, use Hungarian paprika. It has a distinct sweet-smoky taste that sets it apart.
Don't rush the cooking process. Let the goulash simmer slowly to allow the flavors to meld together.
If using chicken breast instead of thighs, be careful not to overcook as they can become dry.
For a thicker consistency, you can mix a tablespoon of cornstarch with cold water and add it to the goulash.
Adjust seasoning to your taste. If you prefer it spicier, add a dash of cayenne pepper.
