Add flour, salt, pepper, onion powder, thyme, and garlic powder to a plate. Stir to combine.
Add panko breading to a second plate and egg yolks in a separate bowl.
Dredge your fish fillet in the flour mixture, followed by the eggs and, finally, the panko breading. Repeat the process with each fillet.
Place your fillet in the air fryer basket and cover it with a light coat of cooking spray.
Air fry for 5 minutes at 400F. Flip the fillet, coat it with more cooking spray, and cook for an additional 5 minutes.

Before air frying, pat the flounder fillets dry with a paper towel. This helps remove excess moisture, allowing the fish to cook more evenly and get crispier. Skipping this step could result in a soggy crust on your flounder.
Depending on the size of your air fryer and the fillets you choose, you may be able to cook more than one fillet at a time. Make sure to arrange the flounder fillets in a single layer in the air fryer basket with no overlap. This ensures even cooking and allows the hot air to circulate correctly.
