Woon Sen or glass noodles

Instructions
Soak the glass noodles in warm water for about 10 minutes until soft. Drain and set aside.
Heat oil in a wok or large frying pan over medium-high heat.
Add garlic and sauté until fragrant.
Add chicken and stir-fry until cooked through.
Add bell pepper, carrot, and onion. Stir-fry until they're crisp-tender.
Add the drained noodles and soy sauce. Stir well to combine all the ingredients and to ensure the noodles soak up the soy sauce.
Continue to cook for another 2-3 minutes until everything is well combined and heated through.
Serve hot, garnished with fresh cilantro or scallions if desired.
Notes
Soak the glass noodles in warm water until they're soft before cooking to prevent them from becoming too chewy.
Adjust the amount of soy sauce to your taste. Remember, you can always add more, but you can't take it out.
Make sure to stir-fry your veggies just until they're crisp-tender to maintain their nutritional content and texture.
Cut all your ingredients into similar sizes for even cooking.
Make sure your pan is hot before you start stir-frying to prevent the ingredients from sticking to the bottom.
