Ingredients
2
cups
cherry tomatoes
2
tablespoons
olive oil
3
cloves
of garlic
finely chopped
Salt to taste
A handful of fresh basil leaves
Instructions
Heat the olive oil in a large pan over medium heat.
Add the chopped garlic and sauté until it's lightly golden.
Add the cherry tomatoes to the pan and season with salt.
Cook the tomatoes, stirring occasionally, until they start to blister and pop, about 10-15 minutes.
Tear the fresh basil leaves and stir them into the pan.
Serve immediately with your choice of dish.
Notes
Always choose ripe but firm cherry tomatoes for the best flavor.
Don't rush the cooking process; the blistering effect comes from a steady heat.
Use a wide pan so the tomatoes are not overcrowded and they roast evenly.
Fresh herbs add a burst of flavor, so use them if available.
You can add a dash of balsamic vinegar at the end for a different flavor profile.
