Ingredients
½
cup
maraschino cherries
drained and chopped
2½
cups
all-purpose flour
1
cup
butter
at room temperature
1
cup
granulated sugar
½
teaspoon
almond extract
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, beat the butter until it's creamy. Add the sugar and beat until fluffy.
Add the almond extract and mix well.
Slowly incorporate the flour, mixing just until combined.
Fold in the chopped maraschino cherries.
Drop rounded tablespoons of dough onto the prepared baking sheet.
Bake for 12-15 minutes or until the edges are lightly golden.
Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Allow your butter to reach room temperature before mixing. It helps it blend better with the sugar.
When combining your dry ingredients, whisk them together to prevent clumping.
Don't overmix the dough as it could result in tough cookies.
For consistent baking, try to keep all cookies the same size.
Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack. This will help them set properly.
