Instructions
Boil the chicken until fully cooked, then shred it.
Chop the onions and tomatoes.
In a large pan, sauté the onions until translucent.
Add the tomatoes and chipotle peppers to the pan and cook until the tomatoes are soft.
Add the shredded chicken to the pan and mix well. Let it simmer for 20 minutes.
Place a generous amount of the tinga on a tostada, then garnish with your toppings of choice.
Notes
Shred the chicken while it's still warm. It's much easier to shred when it's hot.
If the dish is too spicy, add a little bit of sugar to balance out the heat.
The longer you let the tinga simmer, the more flavorful it will become.
For extra flavor, you can add some minced garlic when you're cooking the onions.
If you want to make the tostadas ahead of time, be sure to store them in an airtight container to keep them crunchy.
