Instructions
Cook the sushi rice according to the package instructions. Set aside to cool.
Lay the nori sheet on a bamboo sushi mat. Wet your hands and spread a thin layer of sushi rice onto the nori.
Place slices of avocado and shrimp on top of the rice.
Roll the sushi tightly with the help of the sushi mat.
Roll the sushi in the panko breadcrumbs, making sure it's well coated.
Deep fry the sushi roll in hot oil until the breadcrumbs are golden brown.
Slice the sushi roll into bite-sized pieces and serve.
Notes
Make sure to rinse the sushi rice thoroughly before cooking to remove excess starch and avoid overly sticky rice.
Use a bamboo sushi mat for easier rolling. Cover it with a plastic wrap to prevent the rice from sticking.
When assembling the sushi, don't overload the nori sheet with too much filling. It might be difficult to roll.
Wet your hands or the knife slightly when handling the sushi rice or cutting the sushi roll to prevent sticking.
The key to crunchy roll sushi is the frying process. Make sure your oil is hot enough before frying, but be careful not to burn the breadcrumbs.
