Kielbasa Potato Soup

kielbasa
sliced

large russet potatoes
peeled and diced

large onion

chicken broth

heavy cream
Instructions
In a large pot, sauté the kielbasa until it is browned, then remove it and set it aside.
In the same pot, sauté the onions until they are translucent.
Add the potatoes and chicken broth to the pot. Bring to a boil, then reduce the heat and simmer until the potatoes are tender.
Return the kielbasa to the pot. Stir in the heavy cream and heat the soup until it is hot but not boiling.
Season with salt and pepper to taste, then serve.
Notes
Try to cut your potatoes into uniform pieces for even cooking.
If you want a thicker soup, you can mash some of the potatoes directly in the pot.
Brown the kielbasa first for additional flavor.
Don't boil the soup after adding the cream, just simmer it gently to prevent the cream from curdling.
Taste the soup before serving and adjust seasoning if necessary.
