Ingredients
2
lb
lamb or beef
cut into pieces
1
lb
orzo pasta
4
cups
tomato sauce
2
onions
chopped
4
cloves
of garlic
minced
7
oz
Greek cheese
kefalotyri or feta, grated
Instructions
Preheat the oven to 180 degrees Celsius.
In a large pan, brown the meat in olive oil, then remove and set aside.
In the same pan, sauté the onions and garlic until softened.
Add the tomato sauce and return the meat to the pan, simmering for about 30 minutes.
Cook the orzo in a separate pot according to package instructions, then drain.
Combine the orzo and meat sauce in a large baking dish, sprinkle with cheese, and bake for about 20-30 minutes until golden and bubbly.
Notes
Browning the meat well before adding the other ingredients can add a depth of flavor to the dish.
Using a good quality olive oil can enhance the overall taste of the dish.
If using canned tomato sauce, adding a pinch of sugar can balance out its acidity.
For a creamier texture, you can add a little more cheese just before serving.
You can adjust the amount of liquid in the recipe according to your preference for a drier or more saucy giouvetsi.
