Green Chili Soup

pork shoulder
cut into chunks
1
cup
green chilies
diced

cloves
garlic
minced

large onion
diced

chicken broth
Salt and pepper to taste
Instructions
In a large pot, brown the pork chunks on all sides and set aside.
In the same pot, sauté the garlic and onion until softened.
Add the green chilies and continue to sauté for a few minutes.
Return the pork to the pot, add chicken broth, and bring to a simmer.
Let it simmer for about 2 hours until the pork is tender.
Season with salt and pepper before serving.
Notes
Browning the pork before adding it to the soup can add extra flavor.
For a smoother soup, blend some or all of the cooked chilies and onions before adding to the soup.
If you prefer a more spicy soup, feel free to add some hot sauce or more chilies.
Freshly prepared chicken broth can greatly enhance the taste, but store-bought is fine too.
If you have the time, let the soup simmer for longer to develop the flavors even more.
