Ingredients
1
pound
of fresh or frozen shrimp
peeled and deveined
3
bell peppers
sliced
1
large onion
sliced
2
tablespoons
of fajita seasoning
8
small flour tortillas
Instructions
Heat a large skillet over medium-high heat. Add a little oil if needed.
Add the bell peppers and onions to the skillet. Sauté until they're tender and slightly charred.
Add the shrimp to the skillet and sprinkle the fajita seasoning over everything. Stir well to make sure everything is evenly coated.
Cook until the shrimp are pink and fully cooked. This should take about 2-3 minutes.
Warm the tortillas in the oven or on the stovetop.
Assemble the fajitas by adding the shrimp and veggie mix to the center of each tortilla. Roll up and serve immediately.
Notes
Make sure your pan or skillet is hot before adding the shrimp. This ensures they get a good sear and don't become rubbery.
Don't overcook the vegetables. They should retain a slight crunch to contrast the tender shrimp.
If using frozen shrimp, remember to defrost them thoroughly and pat them dry to avoid excess water in your pan.
Customize your fajitas with additional toppings like cheese, sour cream, salsa, or guacamole.
Serve immediately for best flavor and texture.
