Instructions
Preheat your oven to 375°F (190°C).
Cut the cauliflower into florets and steam until tender but still crisp, about 5 minutes. Drain and set aside.
In a saucepan, melt the butter over medium heat. Add the flour gradually, whisking continuously until a smooth paste is formed.
Slowly add the milk to the flour and butter mixture, whisking continuously until it thickens.
Remove the saucepan from the heat, and stir in the cheese until it's fully melted and combined.
Arrange the steamed cauliflower in a baking dish, and pour the cheese sauce evenly over the cauliflower.
Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
Notes
Ensure the cauliflower is cut into similar-sized florets for even cooking.
Gradually add flour to the melted butter to avoid lumps in the sauce.
Always grate your own cheese; pre-grated cheese contains anti-caking agents which can affect the sauce's smoothness.
Cook the sauce over low heat to avoid it from burning or getting too thick.
Don't overcook the cauliflower; it should be tender but still have a bit of crunch.
