Instructions
Press the tofu for 15 minutes to remove excess water. Cut into cubes.
Heat the olive oil in a pan. Add the tofu and sauté until golden brown. Set aside.
In the same pan, add the spices and sauté until fragrant.
Add the chopped tomatoes and cook until soft.
Add the coconut milk and bring to a simmer.
Return the tofu to the pan and let it simmer for 10 minutes.
Serve with rice, naan, or as desired.
Notes
Press the tofu before using it in the recipe to remove excess water. This helps the tofu absorb the flavors better.
Use ripe tomatoes for a sweeter sauce. The riper the tomatoes, the less sugar you'll need to balance the acidity.
Don't rush the spices. Let them cook slowly to release their full flavor.
Use full-fat coconut milk for a creamier and richer sauce.
The sauce can be made ahead of time and stored in the refrigerator. The flavors develop over time, making it even tastier.
