Ingredients
1
3-pound beef tenderloin
5
cloves
garlic
minced
2
sprigs rosemary
leaves stripped and chopped
2
tablespoons
olive oil
Salt and pepper
to taste
Instructions
Preheat your oven to 425°F (220°C).
Rub the beef tenderloin with olive oil, minced garlic, chopped rosemary, salt, and pepper.
Heat a large oven-safe skillet over medium-high heat. Sear the tenderloin on all sides until browned.
Transfer the skillet to the preheated oven and roast for about 25-30 minutes, or until a meat thermometer reads 135°F for medium-rare.
Let the beef rest for at least 10 minutes before slicing and serving.
Notes
Allow your beef tenderloin to come to room temperature before roasting. This promotes even cooking.
Don’t skip searing the beef. It helps to lock in the juices and creates a delicious crust.
Use a meat thermometer to ensure your beef is cooked to your preferred doneness.
Let your roast rest before slicing. This allows the juices to redistribute throughout the meat.
Don't throw away the pan drippings! They can be used to make a delicious sauce.
