shredded cheese

Instructions
Preheat your oven to 375°F (190°C).
Cut the zucchinis in half lengthwise and scoop out the pulp and seeds, leaving about ¼ inch border.
In a pan, cook the ground meat with the chopped onions and minced garlic until browned.
Add the tomato sauce to the pan and simmer for a few minutes.
Place the zucchini halves in a baking dish and fill them with the meat mixture.
Sprinkle the shredded cheese on top.
Bake in the preheated oven for 20-25 minutes, until the zucchini is tender and the cheese is melted and bubbly.
Notes
To prevent the zucchini boats from getting soggy, scoop out the seeds and pulp carefully.
For an extra cheesy dish, mix some cheese into the meat mixture before filling the zucchini boats.
You can prepare the zucchini boats ahead of time and store them in the refrigerator. Just pop them in the oven when you're ready to eat.
If you have leftover filling, it can be stored in the fridge and used as a great topping for pasta or rice.
Feel free to experiment with the fillings, add your favorite vegetables, spices, or even some cooked rice or quinoa.
