Instructions
Dice potatoes and onion. Set aside.
Heat a pan over medium-high heat and add butter to melt.
Add onions and cook for 1-2 minutes, until the onions are softened and slightly opaque, then mix in the potatoes and corned beef.
Add salt, pepper, thyme, garlic powder and combine.
Continue to cook for 5 minutes.
Garnish with fresh parsley, add sunny side up eggs and serve :)

Parboil the potatoes before frying to ensure they are fully cooked and have a crispy exterior.
