Instant Pot Coq Au Vin

Gather all the  ingredients.

Step 1

Add bacon and  saute for  5 minutes. Remove bacon.

Step 2

Add onion, tomato paste, garlic,  and saute for 5 minutes.

Step 3

Add broth, wine, thyme, chicken,  bay leaves, carrots, salt, pepper, and mushrooms.

Step 4

Close the lid and cook on high pressure for 15 minutes.

Step 5

Do a quick release, add parsley and bacon and saute for 5 minutes.

Step 6

Serve and enjoy :)
