trimmed and cut into 1½-inch cubes

beef broth

cup
brewed coffee

yellow onion
chopped

fresh lemon juice
Salt and freshly ground black pepper
to taste
Instructions
For rub: in a small bowl, mix together all ingredients except roast.
Rub chuck roast with rub mixture generously.
For sauce: in a food processor, add all ingredients and pulse until smooth.
In the pot of Instant Pot, place roast and top with sauce evenly.
Secure the lid and turn to “Seal” position.
Select “Meat/Stew” and just use the default time of 35 minutes.
Press “Cancel” and allow a natural release.
Remove the lid and transfer the roast onto a platter.
Cut into desired sized slices and serve.
