Instant Pot Pork Chops in Tomato Sauce
A tasty and simple dish of tender pork loin chops infused with Asian flavors. The richly flavored tomato sauce adds a succulent touch to the pork chops.

cornstarch mixed with 1 tablespoon water
Instructions
Mix together ¼ teaspoon of salt, ½ teaspoon of sugar, sesame oil, light soy sauce and dark soy sauce in a bowl and add pork chops to marinate.
Set the instant pot to “Sauté” mode and add peanut oil and marinated pork chops.
Sauté for about 2 minutes on each side and dish out.
Add shallots, onions, mushrooms and garlic in the Instant Pot.
Sauté for about 3 minutes and add mushrooms, salt and black pepper.
Add ⅛ cup of water and mix thoroughlywith a wooden spoon.
Mix together ketchup, tomato paste, ½ cup of water, ½ teaspoon of sugar and ½ teaspoon of Worcestershire sauce.
Add the mixture to the Instant Pot along with the pork chops.
Close the lid and cook on high pressure for 2 minutes.
When cooking time is complete, wait for a natural pressure release.
Take out the pork chops and press "saute"
Add more salt, pepper and cornstarch with water and sauté for 3 minutes.
Drizzle the tomato sauce over the pork chops and serve :)
