Instructions
Put coconut oil, chilies, onions, ginger and garlic in the inner pot of Instant pot. Select “Sauté”.
After 3 minutes, add spices, pork, vinegar, tamarind and chicken broth.
Close the lid and set the Instant pot to “Meat/Stew”.
Cook for about 25 minutes on HIGH pressure and release the pressure naturally through the steam vent.
Open the lid and add potatoes.
Again, close the lid and press the “Manual” button.
Cook for about 7 minutes on HIGH pressure and release the pressure naturally through the steam vent.
Open the lid and dish out.
Serve hot.
