Instant Pot Balsamic Chicken
Recipes involving marination have been quite tedious, but not anymore. This Balsamic Chicken recipe uses an iconic combination of spices, herbs, broth and veggies and takes only 20 minutes to get ready!

asparagus

garlic powder

xanthan gum

Instructions
Take an instant pot and add olive oil and chicken thighs to it.
Saute it for 5 minutes while keep flipping the sides of the chicken thighs to cook them equally on both sides. Dish it out and set it aside.
Add ghee, lemon juice, balsamic vinegar, chopped garlic to an instant pot, and stir a bit.
Add broth, sauteed chicken, Italian seasoning, carrots, baby potatoes, salt, and pepper and stir well.
Close the lid and cook on high pressure for 5 minutes.
When cooking time is complete, wait for a natural pressure release (or at least for 20 minutes).
Take chicken and veggies out of the instant pot and set them aside.
Add asparagus and garlic powder to an instant pot and saute them for 5 minutes. Dish it out and set it aside.
Now add xanthan gum to an instant pot and keep stirring.
Pour the sauce over the chicken, serve and enjoy :)

Notes
While making thick sauce or cooking chicken, you can add a bit of water if you got a burning sign.
You can make some holes in the chicken with the help of a fork if you want it spicier from inside than it would be from outside.
