Instant Pot Fried Shrimp

Instructions
Add butter, onions, and garlic to your Instant Pot and saute for 10 minutes, stirring occasionally.
Add mushrooms, scallops, hoisin sauce, white wine, soy sauce, lemon juice, salt, and pepper. Stir to incorporate.
Close the lid and cook on high pressure for 5 minutes.
Wait for a natural pressure release (or for at least 20 minutes). Once done, open the lid and set cooked mushrooms and scallops aside.
Insert the air fryer basket and add shrimp fritters.
Air Fry at 320 °F for 6 minutes.
Plate your mushroom and scallop mixture, then top with your shrimp fritters.
Serve and enjoy :)

Notes
If you are using frozen shrimp for this recipe, you'll want to add an additional minute or two to your cook time.
Ensure your shrimp is placed in the air fryer basket in a single layer, evenly spaced to ensure an even cook amongst your air-fried shrimp.
You can use store-bought
shrimp fritters or make them at home.
