frozen corn

soy sauce

teaspoon
black pepper

teaspoon

Instructions
Add 2 tablespoon of olive oil and ½ teaspoon of sesame oil to the Instant Pot and press "saute" for 10 minutes.
Add 1 lb of shrimp into the Instant Pot and saute until the thickest part of the shrimp is opaque. Take out the shrimp.
Add 1 cup of peas and carrot and 2 garlic cloves into the Instant pot.
Pour in ½ cup of corn and then crack an egg inside. Stir well until the egg is cooked.
Add the cooked shrimp and 1 cup of rice and stir well.
Add green onion, soy sauce, salt and pepper and mix everything together well using a wooden spoon for 2 minutes.
Serve and enjoy :)

Notes
You can leave out the shrimp for a vegetarian meal or use chicken or beef instead.
For extra spice, add cayenne pepper or red pepper flakes.
Since we are using leftover rice, any rice type you have will work for this recipe.
