Instructions
Press the saute button on the Instant Pot for 5 minutes.
Add the oil, chopped onions, and garlic. Stir with a wooden spoon.
Add the remaining ingredients and set the Instant Pot at high pressure for 6 minutes.
Once the time has passed, do a quick release.
Add the beans, lime juice, and coriander. Stir.
Serve and enjoy!

Notes
Don't overcook the rice, or it will be mushy. Pay attention to the times and steps on the recipe card so that you don't end up with mushy rice.
Make sure to drain the liquid from the can of beans that you use before adding the beans to the Instant Pot.
