red chili powder
to taste, for serving
Instructions
Season the pork chops with salt, pepper, paprika, and garlic powder.
Press "saute" and add olive oil.
Add the pork chops to the Instant Pot and saute until brown.
Once the pork chops are brown, take them out of the Instant Pot. Then add in chicken broth and the diced onions, and stir using a wooden spoon.
Add the pork chops back into the Instant Pot and into the broth.
Place a trivet into the Instant Pot and put the sliced potatoes directly on top.
Add a little bit of rosemary and dried thyme to the top of the potatoes.
Put on the lid and cook for 5 minutes on high pressure.
Once the cooking time is complete, wait for a natural release. (or for at least 20 minutes).
Open the lid, add red chili powder on top, serve and enjoy :)

Notes
Make sure that you coat the pork well in the oil and spices when you add it to the Instant Pot. This is what coats it and gives it seasoning.
For crispy pork - you can sear the pork chops in a skillet on the stovetop or place on the Air Fryer Lid and broil at 375 °F for 5-10 minutes.
You can use different types of potatoes or even sweet potatoes. Cooking time stays the same.
