Instructions
Cook the pork shoulder in a slow cooker for 6-8 hours until tender.
In a saucepan, combine the tomato sauce and chili peppers, and simmer for 20 minutes.
Toast the bolillo rolls and slice in half.
Shred the cooked pork and place it on the toasted rolls.
Top with pickled onions and drizzle with the spicy tomato sauce.
Serve immediately with extra sauce and lime wedges.
