light corn syrup

Instructions
Rinse strawberries and pat them dry with a paper towel. Set aside.
In a saucepan, combine sugar, water, and corn syrup. Cook over medium heat, stirring frequently until the sugar dissolves.
Bring the mixture to a boil and continue cooking without stirring until it reaches 300°F (150°C) on a candy thermometer.
Remove the saucepan from the heat and let the syrup cool for a few seconds.
Working quickly, dip each strawberry into the syrup, coating it completely. Allow excess syrup to drip off.
Place the dipped strawberries on a parchment-lined baking sheet to cool and harden.
Optional: decorate with toppings while the syrup is still warm.
Allow strawberries to cool completely before serving or storing.
Notes
Use room temperature strawberries for even sugar coating.
Dry the strawberries completely before dipping to ensure the sugar syrup sticks well.
Stir the sugar syrup frequently to prevent it from burning or crystallizing.
Work quickly when dipping strawberries, as the syrup will harden as it cools.
Store candied strawberries in a cool, dry place to maintain their crunchiness.
