Instructions
Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
In a bowl, mix together oats, sugar, and melted butter. Press mixture into the bottom and up the sides of the pie dish.
Prebake crust for 10 minutes, then remove from oven.
In another bowl, whisk together eggs and corn syrup until smooth. Pour filling over the prebaked crust.
Bake for 35-40 minutes, or until the filling is set and golden brown. Cool completely before slicing.
Notes
Use a food processor to make the crust for a more uniform texture.
Prebake the crust for 10 minutes to prevent a soggy bottom.
