In a saucepan over medium heat, add curry powder, ginger, and garlic. Cook for 1-2 minutes until fragrant.
Stir in the coconut milk, soy sauce, and chicken or vegetable broth. Bring the mixture to a gentle simmer.
If desired, add sugar for a hint of sweetness and stir to combine.
In a small bowl, mix the cornstarch with 2 tablespoons of cold water to create a slurry. If you want to thicken the sauce, slowly pour the slurry into the saucepan while stirring constantly.
Continue to simmer the sauce for 5-10 minutes, or until it reaches your desired consistency. Be sure to stir occasionally to prevent the sauce from sticking to the bottom of the pan.
Season the sauce with salt and pepper to taste. If you'd like a spicier sauce, you can add chili flakes or hot sauce at this point.
Remove the sauce from the heat and let it cool slightly before serving. Pour it over your favorite dishes and enjoy the delicious flavors of your homemade Chinese Curry Sauce.

Adjust the heat level of the sauce by adding more or less chili flakes, or by using a mild or hot curry powder.

Make a large batch of the sauce and store it in the refrigerator for up to a week or freeze it for later use.
