Add chicken gizzards, fresh coriander, and salt to the water to cook over low heat for about 1 hour.
When cooking time is complete, remove from heat and set aside to cool.
Add flour, cornstarch, salt, pepper, onion powder, paprika, and garlic powder to a bowl. Mix until combined. Right before you are ready to use the flour mixture, add the fresh thyme.
In another bowl, beat two eggs.
First, dredge the chicken gizzards in the egg wash, then in the flour mix, and set aside. Then preheat your air fryer to 400F for 5 minutes.
Place the chicken gizzards in the air fryer basket, evenly spaced to allow for even cooking. Then drizzle with some olive oil or coat with a non-stick cooking spray.
Cook in the air fryer for 10 minutes at 300F.
Remove the chicken gizzards from the air fryer basket and serve with your favorite dips or sauces. Enjoy!
