Ingredients

  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/2 1 serrano pepper minced
  • 2 small gold potatots chopped into 1-inch pieces
  • 3/4 lb eggplant chopped
  • 1/4 cup water
  • 1/2 cup onion thawed
  • 3/4 tsp salt
  • 1/2 tsp garam masala
  • cilantro garnish

Instructions

  • Put oil, cumin seeds andSerrano pepper into the Instant Pot and select “Sauté”.
  • Sauté for about 2 minutes and add the remaining ingredients.
  • Put the setting to “Manual” for 4 minutes on “High Pressure”.
  • Select “cancel” and release the pressure quickly.
  • Garnish with cilantro and serve with Indian flatbread.
