Instant Pot Pav Bhaji

Ingredients

  • 2 tbsp butter
  • 3 tomatoes chopped
  • 4 garlic cloves
  • 1/2 red bell pepper chopped
  • 2 potatoes peeled and chopped
  • 1 cup cauliflower cut in small pieces
  • 1 inch ginger
  • 1 medium onion chopped
  • 1 1/2 tsp red chili powder
  • 2 small carrots cut in pieces
  • 1/2 cup green peas
  • 1 tbsp pavbhaji masala
  • 1/2 tbsp lemon juice
  • 1 1/2 tsp salt
  • 1/2 cup water

Instructions

  • Add oil in the inner pot of Instant pot and select “Sauté”.
  • Add onions and cook for about 3 minutes.
  • Then, add bell peppers and sauté for about 2 minutes.
  • Add in pav bhaji masala, tomatoes and salt. Stir well.
  • Then, add carrots, potatoes, green peas and cauliflower. Mix well.
  • Close the lid and press the “Manual” button.
  • Cook for about 8 minutes on HIGH pressure and select the “Cancel” button.
  • Release the pressure naturally through the steam vent and open the lid.
  • Put the mixture in an immersion blender and blend well.
  • Stir in lemon juice and dish out.
  • Serve and enjoy!
