Add all the ingredients except lemon coriander sauce and cornstarch slurry in the inner pot of instant pot.
Close the lid and press the “Manual” button.
Cook for about 3 minutes on HIGH pressure and release the pressure naturally through the steam vent.
Open the lid and add lemon coriander sauce. Stir well.
Prepare cornstarch slurry by mixing cornstarch and water and add it in the instant pot.
Select “Sauté” and simmer until the sauce is thickened.
Dish out the chicken and serve hot.
