Ingredients

  • 1 red bell pepper diced
  • 2 medium garlic cloves minced
  • 1 (15-ounce) can crushed tomatoes
  • 1 tsp kosher salt
  • 1 tsp dried oregano
  • 2 tbsp chili powder
  • 1 medium jalapeno pepper seeded and minced
  • 2 tsp olive oil
  • 2 tsp ground cumin
  • 2 cup yellow onion diced
  • 3 cup cooked black beans drained
  • 1 cup water

Instructions

  • Put the olive oil and onions in the Instant Pot and select “Sauté”.
  • Sauté for 2 minutes and add bell peppers and oregano.
  • Sauté for 5 minutes and add garlic, cumin and chili powder.
  • Sauté for about 1 minute and add beans, jalapeño, tomatoes, salt and water.
  • Stir well and lock the lid.
  • Set the Instant Pot to “Manual” at “High Pressure” for 5 minutes.
  • Set the Instant Pot to “Manual” at “High Pressure” for 5 minutes.
