  • 2 tbsp olive oil
  • 1/4 cup white onion chopped
  • 2 garlic cloves minced
  • 2 Serrano peppers seeded and chopped
  • 3 large carrots peeled and spiralled with blade c
  • 2 tbsp fresh lime juice
  • 8 drops liquid stevia
  • to taste Salt and freshly ground black pepper
  • 1/4 cup scallion chopped
  • 1/2 heavy cream
  • 4 cup vegetable broth


  • Pour oil in the Instant Pot and select sauté.
  • Add onion and cook for about 4-5 minutes.
  • Add garlic, cream, carrots and Serrano peppers and sauté for 1 minute.
  • Secure the lid and cook under “Manual” and “High Pressure” for about 4 minutes.
  • Select the “Cancel” and carefully do a Quick release.
  • Remove the lid and stir in stevia, lime juice, salt and black pepper and cook for about
    1 minute.
  • Select the “Cancel” and serve hot.
