olive oil

yellow onion
chopped finely

cup
red bell pepper
seeded and chopped finely

garlic
chopped finely

fresh cilantro with stems
chopped roughly

ground coriander

teaspoon
ground turmeric

dried black beans
soaked overnight and drained

water
to taste
Salt and freshly ground black pepper

lemon juice
Instructions
Place the oil in the Instant Pot and select “Sauté”. Then add the bell pepper and onion and cook for about 4-5 minutes.
Add garlic, cilantro and spices and cook for about 2 minutes.
Press “Cancel” and stir in the beans, water, salt and black pepper.
Secure the lid and turn to “Seal” position.
Cook on “Manual” with “High Pressure” for about 25 minutes.
Press “Cancel” and allow a natural release.
Remove the lid and stir in lemon juice.
Serve immediately.
