drained and cubed

Instructions
For green beans: In the bottom of Instant Pot, arrange a steamer trivet and pour water.
Place green beans on top of the trivet.
Secure the lid and turn to “Seal” position.
Cook on “Manual” with “High Pressure” for about 5 minutes.
Press “Cancel” and do a quick release.
Carefully, remove the lid and transfer the green beans into a bowl. Set aside.
Remove the water from the pot and with paper towels, pat dry it.
For curry: in a bowl, add the coconut milk, water, peanut butter, water and curry paste and beat until well combined. Keep aside.
Add the oil in the Instant Pot and select “Sauté”. Now, add the dried red chili and cookfor about 30 seconds.
Add the onion and cook for about 1 minute.
Add cashews and cook for about 1 minute.
Stir in the ginger and garlic and cook for about 1 minute.
Add the coconut milk mixture and cook for about 1 minute.
Press “Cancel” and stir in remaining ingredients except the lime juice.
Secure the lid and turn to “Seal” position.
Cook on “Manual” with “High Pressure” for about 2 minutes.
Press “Cancel” and do a quick release.
Carefully, remove the lid and select“Sauté”.
Stir in green beans and cook for about 1-2 minutes.
Press “Cancel” and stir in lime juice before serving.
