Instant Pot Corned Beef And Cabbage

Ingredients

  • 4 cups water
  • 3 lb corned beef brisket (alongside spice packet)
  • 4-5 cloves garlic peeled
  • 1 head green cabbage cut into large wedges
  • 2 lb petite red potatoes quartered
  • 3 cups baby carrots

Instructions

  • Arrange a steamer trivet in the bottom of Instant Pot and pour the water.
  • Arrange the corned beef brisket and garlic on top of the trivet and sprinkle with the spice packet.
  • Secure the lid and turn to “Seal” position.
  • Select “Meat/Stew” and just use the default time of 90 minutes.
  • Press “Cancel” and do a quick release.
  • Remove the lid and transfer the corned beef onto a platter.
  • With a piece of foil, cover the corned beef to keep warm.
  • Remove the trivet from the pot.
  • Place the cabbage, potatoes and carrot in the cooking liquid.
  • Secure the lid and turn to “Seal” position.
  • Cook on “Manual” with “High Pressure” for about 5 minutes.
  • Press “Cancel” and do a quick release.
  • Remove the lid and transfer the vegetables onto the latter alongside the corned beef.
  • Serve immediately.
