Ingredients

  • 2 cups sweet corn fresh, canned, or frozen
  • 1 cup all-purpose flour or substitute as mentioned
  • 1 cup almond milk
  • 1.5 teaspoons baking powder
  • 2 tablespoons flaxseed meal mixed with 6 tablespoons water to make flax eggs
  • Salt and pepper to taste
  • ½ cup chopped fresh cilantro optional
  • 1 finely chopped red chili optional for heat
  • Oil for frying

Instructions

  • In a mixing bowl, combine the flaxseed meal with water and set aside for about 10 minutes until it becomes gel-like.
  • In another bowl, mix flour, baking powder, salt, and pepper.
