Ingredients

  • 500 g chicken bone-in pieces
  • 6 cups water
  • 2 stalks lemongrass smashed
  • 3 kaffir lime leaves optional
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • Spice Paste
  • 4 garlic cloves
  • 3 shallots or 1 small onion
  • 1 teaspoon turmeric powder or fresh turmeric
  • 1 teaspoon ginger
  • 1 tablespoon oil
  • For Serving
  • 1 cup rice noodles or cooked rice
  • 2 boiled eggs sliced
  • Fresh cilantro or green onion
  • Fried shallots
  • Lime wedges
  • Chili sauce optional

Instructions

  • Boil chicken with water, lemongrass, lime leaves, salt, and pepper for 25โ€“30 minutes.
  • Blend garlic, shallots, turmeric, and ginger. Fry in oil until fragrant.
