Slow Cooker Pork Shoulder

Slow cooker pork shoulder is the kind of dinner I start in the morning and barely think about again until the kitchen smells incredible. The meat cooks low and slow until it becomes tender enough to pull apart with a fork, while garlic, spices, and broth build a savory base.

I love serving it piled onto plates with vegetables, rice, or rolls for an easy meal that feeds everyone comfortably.

Why This Recipe Works

Pork shoulder is made for slow cooking because its marbling and connective tissue gradually soften over several hours. Instead of drying out, the meat becomes juicy and tender enough to shred with very little effort. A simple blend of paprika, garlic, onion, and brown sugar seasons the pork throughout, while broth keeps the cooking environment moist.

Searing the shoulder before it goes into the slow cooker adds extra browned flavor, but the recipe still works if you need to skip that step. Onion underneath the meat flavors the cooking juices and creates a natural base for serving. Once cooked, the pork can be shredded directly into those juices so every bite stays moist. It is an easy, versatile main dish that can become sandwiches, tacos, rice bowls, or a traditional dinner with almost no extra work.

Ingredients

Pork Shoulder: Well-marbled pork shoulder becomes exceptionally tender during long, slow cooking. Boston butt or pork butt is ideal, while boneless or bone-in shoulder can both be used.

Yellow Onion: Onion softens underneath the pork and adds sweetness to the cooking juices. White onion can substitute for a slightly sharper flavor.

Chicken Broth: Broth provides moisture and creates flavorful juices for tossing with the shredded pork. Vegetable broth or unsalted beef broth can substitute.

Garlic: Fresh garlic adds savory depth that develops throughout the long cooking time. Garlic paste can be used when fresh cloves are unavailable.

Smoked Paprika: Smoked paprika gives the pork warmth, color, and gentle smokiness without requiring a smoker. Regular paprika works for a milder flavor.

Tips

  • Pat the pork dry before seasoning so the spice mixture adheres evenly to the surface.
  • Sear the shoulder first if you have time for deeper browned flavor.
  • Avoid repeatedly lifting the slow cooker lid because escaping heat can extend the cooking time.
  • Cook until the pork is extremely tender, ideally around 195°F to 205°F for easy shredding.
  • Let the meat rest briefly before pulling it apart, then toss it with some cooking juices.

How to Serve

Slow cooker pork shoulder is best served warm after shredding the meat and tossing it with enough cooking liquid to keep every bite juicy. Because the seasoning is savory rather than strongly sauced, the pork works with a wide range of sides and toppings. Keep leftovers with some of the juices so they reheat without drying out.

  • Serve it with mashed potatoes, roasted carrots, and green beans for a comforting dinner.
  • Pile the shredded pork onto sandwich rolls with coleslaw and barbecue sauce for an easy lunch.
  • Use it in tacos or rice bowls with avocado, salsa, pickled onions, and fresh cilantro for a completely different meal.

Ingredients

  • 4 pounds pork shoulder or pork butt
  • 1 large yellow onion sliced
  • 1 cup low-sodium chicken broth
  • 5 garlic cloves minced
  • 2 teaspoons smoked paprika
  • 1 tablespoon olive oil
  • 1 tablespoon packed brown sugar
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Instructions

  • Pat the pork shoulder dry. Mix the smoked paprika, brown sugar, cumin, oregano, salt, and black pepper, then rub the seasoning mixture all over the pork.
  • Heat the olive oil in a large skillet over medium-high heat. Sear the pork for 2 to 3 minutes per side until browned.
  • Arrange the sliced onion and garlic in the bottom of the slow cooker. Pour in the chicken broth, Worcestershire sauce, and apple cider vinegar.
  • Place the pork shoulder on top of the onions. Cover and cook on LOW for 8 to 9 hours, or until the meat is very tender and easily pulls apart with a fork.
  • Transfer the pork to a cutting board and let it rest for about 10 minutes. Remove any large pieces of excess fat and discard the bone if using bone-in pork.
  • Shred the meat with two forks, return it to the slow cooker, and toss with enough of the cooking juices to keep it moist. Serve warm.

  1. The pork came out soft enough to shred with a spoon, and the leftovers made sandwiches, tacos, and one very good rice bowl.
