  • 3 lbs beef chuck roast trimmed of excess fat
  • 3 chipotle peppers in adobo sauce minced
  • 1 cup beef broth
  • 4 garlic cloves minced
  • Juice of 2 limes
  • 2 teaspoons cumin
  • 1 teaspoon oregano
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil for searing

Instructions

  • Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned, about 2–3 minutes per side. Transfer to the slow cooker.
  • In a small bowl, mix the chipotle peppers, beef broth, garlic, lime juice, cumin, oregano, smoked paprika, salt, and pepper. Pour the mixture over the beef.
