Ingredients

  • 12 oz spaghetti or pasta of choice
  • 1 lb shrimp peeled and deveined
  • 4 slices bacon chopped
  • 2 eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • ยผ cup pasta water reserved
  • Fresh parsley optional, for garnish

Instructions

  • Cook pasta according to package instructions. Save ยผ cup of pasta water, then drain.
  • In a pan, cook bacon until crispy. Remove and set aside.
  • In the same pan, add shrimp and cook 2โ€“3 minutes per side until pink. Remove shrimp.
  • In a bowl, whisk together eggs and Parmesan cheese.
  • In the pan, add garlic and cooked pasta. Toss to heat through.
